I had to post this just in case there is someone out there that hasn’t ever tried a breakfast burrito. I was shocked when my sister said the lady at the grocery store asked what she was making with these ingredients and the lady had never heard of such a thing. My sister was nice enough to take one back to her. Luckily, I didn’t have to share mine. I could eat these for every meal and be happy.
6 Flour Tortillas (6 inch)
12 Large Eggs
1/2 tsp Salt
1/2 tsp Pepper
8 oz Mild Sausage
1 cups Colby Jack Cheese, shredded
1 1/2 cups Salsa
Crumble and brown the sausage. Drain the fat and set aside.
In a large bowl, whisk eggs, salt and pepper.
In a large pan, combine sausage and eggs. Cook over medium-low heat until done, about 6 minutes.
Warm tortillas for 30 seconds in the microwave or individually in a pan on the stove.
Divide eggs into the tortillas and top with cheese. Curl up one end of the tortilla and wrap the sides towards each other. Wrap with foil to keep warm or to help hold them together.
Kroger’s had a special on their chicken if you purchased the new Kraft Fresh Takes, so I decided to try it since this week has been so crazy. (Here’s a coupon for you too) It was really easy. Cleaning and preparing chicken is one of my least favorite things to do. I did find a video on how to prepare chicken breasts. I was hoping it had some new trick I didn’t know about but no such luck. A few weeks ago I bought a new meat tenderizer because the one we had was put in the dishwasher and was leaving black and grey stuff on everything it touched. The new one said “dishwasher safe”. Well guess what??…it did the same thing. So now I’m resorting to anything else…pan, wine bottle, fist (I’m open to any other suggestions). Cover it with parchment paper before attempting to tenderize.
The Fresh Takes was really good. Plus it was super easy and quick.
1 lb chicken
6oz package Kraft Fresh Take Cheddar Jack & Bacon Recipe
Preheat oven to 375 degrees
Tenderize chicken. Place chicken in mixture and place on baking sheet. (I would cover the baking sheet with foil)
Place any leftover mixture on top of chicken
Bake for 30 minutes
