Chicken Tamale Bake

Okay, just catching up on The Bachelor…..Sean surprising Sarah with her dog was the sweetest thing ever! We raise them right in Dallas. Bless his heart for having to deal with the crazy girls though. Ugh it is so painful to watch sometimes.

I loved this! It’s not as cheesy as it looks in the picture. (I’ve got to figure out a better lighting set-up until we get to daylight savings time.) It was even better the next day. Only 297 calories too!

1 oz Monterey Jack Cheese, shredded
1 oz Colby Jack Cheese, shredded
2 oz Sharp Cheddar Cheese, shredded
1/3 cup Fat-Free Milk
1/4 cup Egg Substitute
1 tsp Ground Cumin
1/8 tsp Ground Red Pepper
14-3/4 oz Cream-Style Corn
8.5 oz Box Jiffy Corn Muffin Mix
4 oz Can Chopped Green Chiles, drained
Cooking spray
10 oz Can Red Enchilada Sauce
2 cups Cooked Chicken Breast, shredded

Preheat oven to 400 degrees. Spray 9″ x 13″ baking pan with cooking spray.

Toss the 3 cheeses together.

Combine 1/4 cup of the cheese mixture, milk, egg substitute, cumin, red pepper, corn, corn muffin mix and chilies in a large bowl; stir just until moist. Pour mixture into baking dish.

Bake for 20 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with chicken; sprinkle with remaining cheese.

Bake for 15 minutes. Remove from oven; let stand 5 minutes.

Yesterday I took the girls to American Girl to spend some more Christmas money. That place was crazy. It was more crowded than an Apple store. We were there for the same thing everyone else was there for….Saige, her horse and her dog. I wondered where we were going to fit more AG stuff. They have almost the entire catalog. But they figured it out, the closet is now a stable for all the horses and the girls without beds are stuck using sleeping bags. I forgot my camera, so here is their very first trip to the American Girl store in New York City… Time goes by way too fast.

ry=400-5I loved, loved, loved these! As an added bonus, they are only 119 calories each.

2 tsp Extra Virgin Olive Oil
2 Garlic Cloves, minced
2 Sandwich Rounds
2 Plum Tomatoes, sliced thin
1 tsp Dried Basil
1/4 tsp Crushed Red Pepper
1/4 tsp Salt
6 Tbs Parmesan Cheese, shredded

Preheat oven to 450 degrees.

Place sandwich rounds inside part down on baking sheet.

Combine oil and garlic. Brush over sandwich rounds.

Add tomatoes. Sprinkle with basil, pepper and salt. Top with cheese.

Bake for 8 minutes.

Pretend Peach Cobbler

Well in case you were wondering….the trip to the groomers yesterday went about as smooth as I expected. I thought I’d be smart and carry Lily and walk Princess so that they wouldn’t get all tangled and trip me. Things were going fairly smooth until I’m checking in and almost tripped over the girl at my feet that had swooped over cleaning up my dogs accidents on both sides of me.  :/  When I picked them up I had to wait 17 minutes because they couldn’t get them to stay still to put bows in their hair. As I waited, I watched all the other dogs from doggy day care prance out to their cars beside their owner without a leash. Mine come out acting a fool, but with unwanted candy corn bows on their ears and one with only half of her tail. Lily was worn out from her spa day…..
I threw this together the other night because I had a sweet tooth. I think it was withdrawal from all the desserts I had while I was on the cruise. Which I still feel like I’m on by the way. This mal de debarquement syndrome is so fun!

 

 

 

 

 

 

 

 

Ingredients:

1 Peach, peeled and diced
1/2 Tbs Sugar
1/2 tsp Cinnamon
1 tsp Water
2 Tbs Vanilla Yogurt
2 Tbs Grape Nuts
Mix sugar, cinnamon and water. Toss in peaches. Heat in skillet over medium heat for about 5 minutes.
Divide the peaches, yogurt and Grape Nuts between two dessert dishes.

Healthy Strawberry Sundae

After watching the Candy Couture episode of Project Runway I needed something sweet or an outfit made entirely out of candy. I didn’t have any candy to make an outfit so I went with this instead.

1/2 cup Strawberries, sliced
1/2 Tbs Grape Nuts
2 Tbs Cool Whip
1 Tbs Hershey’s Syrup

Place strawberries in a bowl. Top with cool whip and chocolate. Sprinkle grape nuts on top.

Caramel Pecan Banana Sundae

I’ve come to realize that staying at home has turned me into my grandfather. He had unfinished projects all through the house for the first 18 years of my life. My favorite unfinished project was the sheetrock that he put up in the family room. He spackled (I have no idea how to spell spackle but apparently this isn’t it) the nail holes after he put the sheetrock up but that was where he stopped. So for as long as I can remember they had polka-dotted walls. I took inventory of my unfinished projects today…I have polka dots on 3 walls, 2 tables to refinish, 12 chairs to recover (1 is done so there is a mismatched set somewhere), plants for the yard (those are almost finished), herbs to plant, a broken armoire that needs to be moved and an attic door that won’t close. Oh! And I just refinished the shades on my chandelier – one to check off my list! I figure I have enough projects to get me through the summer. So to save some time in the kitchen, here’s a really quick, easy and healthy dessert for when you get a sweet tooth.

2 Medium Bananas, sliced
2 Tablespoons Sugar-Free Caramel Sauce
2 Tablespoons Chopped Pecans

Warm caramel sauce in the microwave for 15 seconds (30 if it has been refrigerated). Pour sauce over bananas and top with pecans.
