Powdered Donut Holes

I had to go to my uncle’s funeral yesterday. I really hate funerals but somehow there always seems to be something to lighten the situation a little. This time it was the person behind us that asked “Can you go to Tyler to pick up my teeth?” I probably could have made it without laughing it would have just been the one question, but it was a whole conversation. This one is now my favorite funeral story right behind the one where the 92 year old preacher’s cell phone kept ringing during the service and he didn’t know how to turn it off. He finally answered it about the 8th time and said in a stern voice “I am in the midst of a funeral would you please stop calling my phone!” Gotta love country funerals. R.I.P. Uncle Billy.

1 cup sugar
1/2 cup butter, melted
1/2 tsp ground nutmeg
1 cup milk
2 tsp baking powder
2 cups + 4 Tbs cake flour

For topping:
2/3 cup powdered sugar

Preheat oven to 350 degrees and grease top and bottom of cake pop pan. Mix the cup of sugar, butter and nutmeg in a large bowl. Add in the milk, baking powder and flour until just combined. Fill bottom part of cake pop pan and put on top of pan. Bake for 10 minutes. Put sugar in a ziploc bag. Add a few donuts at a times and shake to coat.

Baked Cinnamon Sugar Donut Holes

The girls start 4th grade today. It’s so hard to believe. I have promised Taylor that I won’t cry this year when I walk them to their classroom to drop them off. She has asked me to promise about 11 times “because last year all the kids laughed when I left”. :/ Hopefully I can keep my promise. I think I was the only 3rd grade mom crying last year. And I’ll probably be the only 4th grade mom crying this year if I had to guess. For their Back to School Breakfast they asked me to make donut holes. These put quite a kink in my cruise weight loss plan because they are so addictive.

1 cup sugar
1/2 cup butter, melted
1/2 tsp ground nutmeg

2 cups + 4 Tbs cake flour

1 tsp cinnamon

Homemade Baked Donuts

Are you a donut person or a doughnut person?? I personally have an aversion to “doughnut” but after some research I discovered that “doughnut” is the correct spelling and “donut” is kind of like the nickname. I think the two of us are close enough that we passed the point of being able to go by nicknames long ago. So donut it is!

I had the pleasure of meeting Tori Spelling. Since her real name is Victoria and she introduced herself as Tori, we have reached the nickname stage too! The girls have become huge Tori Spelling fans now because of her furry silky chicken and her pig. They would leave me and move in with her in a heartbeat. She’s a complete doll by the way.

Wilton Baked Cake Donuts

2 cups cake flour, sifted
3/4 cup sugar
2 tsp baking powder
1/4 tsp ground nutmeg
1 tsp salt
3/4 cup buttermilk
2 eggs, lightly beaten
2 Tbs butter, melted

Preheat oven to 425 degrees. Spray donut pan with cooking spray. In large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter. Beat until just combined. Fill each cup approximately 2/3 cup full. Bake 7 minutes or until the tops of the donuts spring back when touched. Let cool in pan for 5 minutes before removing. Finish donuts with chocolate glaze, cinnamon sugar or confectioners sugar. Makes 12 donuts. Cinnamon Sugar: 2 Tbs sugar 1 Tbs cinnamon 2 Tbs butter, melted In a shallow bowl, stir together the sugar and the cinnamon. Dip the donut in the butter and roll in the cinnamon sugar mixture.

Chocolate Glaze:
1/2 cup semisweet chocolate chips
2 Tbs butter
2 Tbs corn syrup
1-2 tsp hot water

In medium bowl, microwave chocolate chips, butter and corn syrup on 50% power for 1 minute, stirring frequently until completely melted. Stir in 1 teaspoon hot water, until the glaze is thick and smooth. Add another teaspoon of hot water if the glaze is too thick.
