Pretend Peach Cobbler

Well in case you were wondering….the trip to the groomers yesterday went about as smooth as I expected. I thought I’d be smart and carry Lily and walk Princess so that they wouldn’t get all tangled and trip me. Things were going fairly smooth until I’m checking in and almost tripped over the girl at my feet that had swooped over cleaning up my dogs accidents on both sides of me.  :/  When I picked them up I had to wait 17 minutes because they couldn’t get them to stay still to put bows in their hair. As I waited, I watched all the other dogs from doggy day care prance out to their cars beside their owner without a leash. Mine come out acting a fool, but with unwanted candy corn bows on their ears and one with only half of her tail. Lily was worn out from her spa day…..
I threw this together the other night because I had a sweet tooth. I think it was withdrawal from all the desserts I had while I was on the cruise. Which I still feel like I’m on by the way. This mal de debarquement syndrome is so fun!










1 Peach, peeled and diced
1/2 Tbs Sugar
1/2 tsp Cinnamon
1 tsp Water
2 Tbs Vanilla Yogurt
2 Tbs Grape Nuts
Mix sugar, cinnamon and water. Toss in peaches. Heat in skillet over medium heat for about 5 minutes.
Divide the peaches, yogurt and Grape Nuts between two dessert dishes.

Crock Pot Barbecue Chicken Sandwich

Meet our new furry neighbor…Mandy!

Isn’t she cute?? Megan and I found her wandering around in front of our house when we were on the way to cheerleading practice. When I got back I found her making her way to the main road so the rest of us had to get a leash and go rescue her. Our good deed for the day. Apparently she’s not adjusting to her new home very well and keeps escaping. Luckily, she’s 11 so she doesn’t wander off too far.

Okay, so this probably doesn’t qualify as a recipe. More like an idea. But it was good, quick and easy. I’m going to have to come up with as many crock pot ideas as I can for cheerleading practice days.

2 lb chicken breast, boneless and skinless
18 oz barbecue sauce
1 onion, sliced
6 hamburger buns

Place chicken in crock pot. Add onions and pour barbecue sauce on top. Cook on low for 8 hours. Shred the chicken with a fork. Serve on buns with or without the onions.

Apple Walnut Muffins

I found half a jar of applesauce when I was cleaning out the refrigerator today, so I stopped cleaning and made these instead. I get side tracked easily thank goodness. Which reminds me….HGTV has a Design All Stars!!! I was beyond ecstatic when I saw that. Thank goodness they had a rerun of last weeks! I <3 Sparkle Josh!! I want to be his best friend.

Guess who went to the spa today??? As usual they were totally embarrassing. Their bows didn’t last long. They missed their naps so their night was all out of whack. What a rough life they have.

1-1/2 cups flour
1/2 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup sugar
1 cup unsweetened applesauce
3 Tbs vegetable oil
2 egg whites
1 large egg
1 Tbs orange juice
1 tsp lemon peel
1 cup apple, diced
1/4 cup walnuts, chopped

Preheat oven to 350 degrees. Line muffin pan with baking cups. Mix together flours, baking powder, baking soda, cinnamon and sugar. In separate bowl, mix together applesauce, vegetable oil, egg, egg whites, orange juice and lemon peel. Combine the two together being careful to not over mix. Stir in apples and walnuts. Bake for 20 minutes.
