I’ve decided that KettleWorx is making me OCD. Anyone else doing it?? Did they edit those things at all? There must be about 30 errors on each DVD. 3 moves on the right side, then 7 on the left side leaves me feeling unbalanced the rest of the day. Or my favorite is when he says “okay, 4 more reps! 1, 2, and last one”. Don’t get me wrong, I love KettleWorx. I’ve been doing it for about 6 months. But 6 months of the same errors over and over and over again is going to make me crazy. I’m tempted to just write down the exercises on a sheet of paper and do them on my own, evenly on both sides.

One of my favorite smoothies…

1 cup Orange Juice
1 cup Vanilla Low-Fat Yogurt
1/8 tsp Cinnamon
1 Frozen Banana, sliced

Place in blender and blend until smooth.

The other day Megan asked me if she could watch Dr. Phil. I told her it wasn’t on and asked her why she wanted to watch it (because I’ve never even watched it myself). She said “I have noooo idea”. So yesterday when we walked in from school, it just happened to be on. She watched it for a few seconds, said “ehhhh” and opted for her usual post school show…Ellen. Both of the girls have been begging me for months to submit my Glamour Shots photo to Ellen for the “bad paid for photos“. :/ So I finally did it for them to help make up for the birthday fiasco. Here it is, go ahead and laugh…. and yes, that’s an ice cube.

1/2 cup Vanilla Frozen Yogurt
2 Bananas, sliced and chilled
15 oz can Pineapple Tidbits, chilled

Chill bananas and pineapple in freezer for 20 minutes.

Mix all ingredients in blender until smooth.

Super Moist Pumpkin Banana Bread

 

I found this dress from Ooh La La Couture at Nordstroms yesterday. I was so excited! Then I got home to show the girls to see if they wanted it for the Daddy Daughter Dance and they both said no. I thought I had done a much better job at raising them. The little tiny ones were even cuter!! The other thing I was excited about…my pumpkin bread! It was delicious. It’s not going to last very long. Thankfully I have an emergency spare in the freezer!

 

 

 

 

 

 

 

 

 

 

 

 

1 cup Applesauce
1-1/2 cups Sugar
1/2 cup Dark Brown Sugar
1 cup Ripe Bananas, mashed
10 oz Canned Pumpkin
2 Tbs Unsalted Butter, softened
3-1/2 cups Flour
2 tsp Baking Powder
2 tsp Cinnamon
1 tsp Ground Ginger
1/2 tsp Salt
1/2 tsp Jamaican Allspice
1/4 tsp Baking Soda
2 cups Pecans, chopped

Heat oven to 350 degrees. Spray two 8x4x2 inch loaf pans with non-stick cooking spray.

Mix applesauce, sugars, banana, pumpkin and butter.

Sift all the dry ingredients (except the pecans) together in a separate bowl. Add the dry ingredients to the wet ingredients. Stir just until all the dry ingredients are mixed in. Stir in pecans.

Divide the batter evenly between the two pans. Bake for 60 minutes, or until a toothpick inserted in the middle comes out clean. Cool on a rack for 10 minutes before removing it from the pan. Cool completely before slicing.

Cream Cheese Banana Nut Bread

Yesterday was Parent/Teacher conferences. I must have the shortest conferences ever. I think we were in and out of there in 4.6 minutes. The girls always make me so proud.  The girls couldn’t be any more different though. Yesterday, Taylor decided to start writing a book. She’s done a blog, keeps a Facebook page for our dogs and now she’s writing a chapter book. Pretty good for a 9 year old. Megan likes bling, cheerleading, clothes and big bows. But when the teachers every single year tell me how quiet they are I can barely contain my laughter. Taylor, Miss 20 questions and Megan, who is constantly doing something crazy. Apparently they store it up all day and save it for when they get home.

My friend posted a picture of cream cheese banana bread yesterday and it just so
happened I had cream cheese and bananas I needed to use. And thank goodness my sister lives down the street so I can take some of it to her so I don’t eat it all.

Mix butter and cream cheese at medium speed until creamy. Gradually add sugar, mixing until fluffy. Add eggs, 1 at a time. Mix just until blended.

Combine flour, baking powder, baking soda and salt. Gradually add to butter mixture. Mix at low speed just until blended. Stir in bananas, walnuts and vanilla. Divide batter between the two loaf pans.

Mix topping ingredients and sprinkle over both loafs.

1/2 cup Walnuts, chopped
1 Tbs + 1 tsp Cake Flour
1 Tbs Butter, melted

Preheat oven to 350 degrees. Spray two 8″x4″ loaf pans with non-stick cooking spray.

Mix butter and cream cheese at medium speed until creamy. Gradually add sugar, mixing until fluffy. Add eggs, 1 at a time. Mix just until blended.

Combine flour, baking powder, baking soda and salt. Gradually add to butter mixture. Mix at low speed just until blended. Stir in bananas, walnuts and vanilla. Divide batter between the two loaf pans.

Mix topping ingredients and sprinkle over both loafs.

Bake for 1 hour, covering with foil for the last 15 minutes to prevent browning. Cool for 10 minutes on wire rack. Remove from pans and let cool on wire racks for 30 minutes before slicing.

Super Moist Banana Nut Bread

Hunger Games – check! Wow that movie was so much more disturbing than I ever expected. It was really good, but did they have to make it kids??? I can’t take kids or animals in movies without crying. If it would have been adults I might have been okay. (well probably not, but I like to pretend – as I sit here crying over Extreme Makeover Weight Loss Edition)

I made crock pot banana bread but realized I hadn’t made a normal banana nut bread. This one is super moist and was extra special because my mini sous chef Megan helped me make it.

2 cups flour
1½ tsp baking soda
2 cups bananas, mashed
1 cup sugar
Pinch of salt
½ cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup chopped walnuts

Preheat oven to 350 degrees. Spray two 8×4-inch loaf pans with cooking spray.

In a medium bowl, mix together the flour, baking soda and salt.

In a separate bowl mix the bananas, sugar, oil, eggs and vanilla on medium speed. Add the flour mixture and mix on low until just combined. Fold in the walnuts.

Divide the mixture into the two pans. Bake for 40 minutes, or until a toothpick inserted into the middle comes out clean.

Chocolate Dipped Bananas

Johnny wanted a frozen chocolate dipped banana the entire time we were at Disney World, but for some reason he never got one. I decided to be a good wife and try to make him one. Which reminds me, Target has Season 2 of The Good Wife on sale this week if you need it. We just finished season 1 and it was really good. Even better though is Damages. Almost done with season 2 of that one and it is awesome. If you need a good drama to watch I’d highly recommend finding the dvd’s. One of my all time favorite dramas. Now that I’m done with my ramblings, here are the Disney World Frozen Chocolate Bananas….

3 bananas
6 popsicle sticks
2 cups chocolate chips
2 tablespoons butter, cut into cubes

Assorted Toppings:
Nuts
Sprinkles
Coconut
Cookies
Candy Bar
M&M’s
Reese’s Pieces
Peanut Butter cups
Granola
Marshmallows

Peel and cut the bananas in half crosswise, so that you have 6 pieces. Place peeled bananas on sticks. Line a cookie sheet with waxed paper. Place bananas on the cookie sheet in the freezer for 20 minutes. Heat chocolate chips with butter in the microwave for 30 seconds. Repeat in 15 second intervals stirring in between until melted. Dip the bananas in chocolate and roll in desired toppings. Freeze for 1 hour. Or if making ahead of time, remove from freezer 20 minutes before serving.

Creamy Banana Pudding

This has been one of my every holiday desserts for almost 20 years, which makes me feel really old. I had only made it for holidays until Johnny’s step-father asked for it for his birthday. So we had Birthday Banana Pudding with our Birthday Pot Roast. Taylor and Megan love to have parties,they’ll probably want one for our multiplying geckos next.

Two nights ago as we are sitting in the game room, I see a tiny slithering thing run across the floor. I scream for Johnny to get it and he just looked at me like “what am I supposed to do?” and tells me “it won’t hurt anybody”. :/ And then it disappeared…completely, totally and under MY chair!! It was another gecko. This one seemed much faster than the last one. I didn’t sleep well knowing he could pop up anywhere. Well, we never found that one, but last night I found his Momma in my bathtub. I threw a wet washcloth in their and finally got her to get on top of it. Then I put a cup on top of the washcloth and set her free outside. She was a fast little big thing. My screaming and freaking out probably scared her more than me trying to catch her. I’ve had about all of the geckos I can take for the summer. Unfortunately the little one is still running around in her somewhere….

14 oz sweetened condensed milk
1 1/2 cups cold water
5.1 oz box instant vanilla pudding mix
2 cups heavy whipping cream
1 12 oz box vanilla wafers
3 large bananas, sliced
1/4 cup sugar

In large bowl combine milk and water. Add pudding and mix well. Chill 5 minutes. Mix whipping cream with sugar. Fold into pudding mixture. In large bowl or dish (mine was about 11″x7″) add 1/4 of the wafers, 1/3 of the bananas and 1/3 of the pudding mixture.Repeat layers 2 more times and top with a final layer of wafers. Keep chilled until ready to serve.

Banana Oat Muffins

This weekend was our annual family reunion picnic. My mom comes from a HUGE family so it’s great to have a time set aside once a year to get to see everyone. If you don’t do something like that, I highly recommend it. Everyone chips in some money at the reunion and that covers the rent for the space for next year. We even had a baking contest. (I won for my s’mores bars. Yeah me!!!) The girls had so much fun there at Camp Rorie Galloway. They played tether ball, fished, went on a hike and played on the obstacle course. I had two really ripe bananas that I hated to just throw away so I decided to experiment. You could omit the chocolate chips or pecans if you wanted to save some calories but what fun would that be??

3/4 cup flour
3/4 cup whole wheat flour
1 cup old fashioned oats
1/3 cup sugar
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup mashed bananas (2 large bananas)
1/4 cup chopped pecans
1/4 cup chocolate chips
Preheat oven to 375 degrees.
Combine flour, oats, sugar, baking powder, soda and salt.
In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla.
Add the mashed banana, and combine thoroughly.
Stir the flour mixture into the banana mixture until just combined.
Add pecans and chocolate chips.
Line muffin pan with baking liners.
Pour batter evenly into muffin cups.
Bake for 18  minutes.
Servings: 12 muffins
