Yesterday I took the girls to American Girl to spend some more Christmas money. That place was crazy. It was more crowded than an Apple store. We were there for the same thing everyone else was there for….Saige, her horse and her dog. I wondered where we were going to fit more AG stuff. They have almost the entire catalog. But they figured it out, the closet is now a stable for all the horses and the girls without beds are stuck using sleeping bags. I forgot my camera, so here is their very first trip to the American Girl store in New York City… Time goes by way too fast.

ry=400-5I loved, loved, loved these! As an added bonus, they are only 119 calories each.

2 tsp Extra Virgin Olive Oil
2 Garlic Cloves, minced
2 Sandwich Rounds
2 Plum Tomatoes, sliced thin
1 tsp Dried Basil
1/4 tsp Crushed Red Pepper
1/4 tsp Salt
6 Tbs Parmesan Cheese, shredded

Preheat oven to 450 degrees.

Place sandwich rounds inside part down on baking sheet.

Combine oil and garlic. Brush over sandwich rounds.

Add tomatoes. Sprinkle with basil, pepper and salt. Top with cheese.

Bake for 8 minutes.

Barbecue Chicken Pizza

I’ll never forget my first time trying barbecue chicken pizza…Las Vegas, California Pizza Kitchen at The Golden Nugget. This wasn’t quite the same without the wonderful sounds of slot machines in the background but it was still pretty good!

Preheat oven to 375 degrees. Place chicken in baking dish. Pour 1/2 cup BBQ sauce over the breasts and turn them over to coat on the other side. Bake for 25 minutes. Remove from oven and dice. Set aside. Increase oven temperature to 425 degrees. Stretch out pizza crust. Lay it on a pan drizzled with olive oil. Spray a little olive oil on the crust.

Spoon 3 tablespoons of extra BBQ sauce on the crust and spread it evenly. Top sauce with the mozzarella and then sprinkle on the diced chicken.

Bake for 15 minutes, or until crust is golden brown and toppings are bubbly. Remove from the oven and sprinkle on chopped cilantro. Cut into squares and serve.

Ingredients:

1 Refrigerated Pizza Crust
1 Chicken Breast, boneless & skinless
½ cup Barbecue Sauce
3 Tbs Barbecue Sauce
8 oz. Mozzarella Cheese
Chopped Cilantro
Olive Oil

Grilled Tortilla Pizzas

We had these at my sister’s house the other day. They were a huge hit. We also tried a more healthy version with wheat tortillas and reduced fat cheese. Not quite as good but still tasty. On a separate note, we went to a party tonight and the house was AMAZING! Why didn’t I take pictures??? It even had a Viking range. I’m so jealous. There were misters by the pool, a huge outdoor kitchen, 3 tv’s in the game room and touch screen climate controls (with weather updates) in each room. Not one detail was missed, which made me realize again that I really need to start a list of things to help my girls when they decide to build their first house. Like to make sure that the switch for the garbage disposal is by the sink. Why in the world did my builder think that mine needed to be 3 feet away. Drives me crazy every time I flip it. Anyway…. Top 4 tortillas with 1/4 cup of cheese each.Top with another tortilla.Place on grill for 2 minutes to make crispy.Add 1/4 cup of sauce.Add another 1/4 cup of cheese.Add any additional toppings that you would like….pepperoni, sausage, olives, onions, peppers…Return to grill and cook for 2-3 minutes, or until cheese is melted.My personal chef (because he doesn’t trust me with a grill) 8 Flour Tortillas 4 Cups of Mozzarella Cheese, shredded 1 Cup Marinara Sauce 28 Turkey Pepperoni 1/2 Cup Sausage, crumbled (Jimmy Dean pre-cooked Hearty Sausage Crumbles) Heat grill to Medium-Low temperature. Top 4 tortillas with 1/4 cup of cheese each and top with another tortilla. Place on grill for 2 minutes to make crispy. Remove from grill, flip with grilled side up and top with sauce, cheese and toppings. Return to grill and cook for 2-3 minutes, or until cheese is melted.
