Homemade S’mores Ice Cream

Taylor had been asking me to try to make her s’mores ice cream for over a week. When I finally went to make it I realized that I had accidentally put the freezer container in the cabinet instead of the freezer. I’ve never seen her so impatient waiting for it to finally freeze. Except for the days we were waiting for her shoes to arrive. She was extremely happy and got to wear them on our walk yesterday. The shoes held up much better than the dogs did. 1/2 cup cocoa powder 1/3 cup sugar 1/4 cup packed brown sugar pinch salt 2/3 cup whole milk 1½ cups heavy whipping cream 1 teaspoon vanilla extract 2/3 cup marshmallow fluff 1 cup graham crackers, chopped Mix the cocoa, sugars, and salt together until combined. Add milk to the cocoa mixture and whisk together until the cocoa and sugars are well dissolved. Add the whipping cream and vanilla and mix well. Pour the mixture into ice cream freezer for 30 minutes or until thick. Leave the ice cream churning and add the marshmallow a spoonful at a time. Add the graham crackers. Homemade Chunky Monkey Ice Cream

Let me tell y’all, it’s not easy taking a picture of ice cream in Texas in July. It’s a good thing I got this picture on the first shot because it looked like milk by the last picture. My favorite ice cream is Ben & Jerry’s Chunky Monkey and once again I had bananas that were going to go bad. So I thought I’d try to recreate it without Ben, Jerry or the tons of calories. I really, really need to stop buying bananas because now I have a kitchen full of banana nut muffins (coming later) and a freezer full of Chunky Monkey. 2/3 cup Sugar 2/3 cup Milk 1-1/2 cup Heavy Whipping Cream 1 tsp Vanilla 2/3 cup Banana, mashed Pinch Salt 1/2 cup Walnuts, chopped 1/2 cup Chocolate Chips Combine sugar, milk, cream, vanilla, banana and salt in blender and blend until smooth. Pour into ice cream freezer and churn for 30 minutes. Pour in walnuts and chocolate chips and churn for another 5 minutes. Peaches & Cream Ice Cream

The girls think they are supposed to have ice cream after every meal, so I thought I’d start making my own and try to sneak some fruit into it. Taylor wanted no part of that. She wants mint chocolate chip. Wonder if I could sneak some zucchini into that?? 2 cups peaches, chopped 1 cup sugar 1 cup whole milk 2 cups heavy cream 1 teaspoon vanilla extract Place all ingredients in a blender and blend until mostly smooth. Pour into ice cream freezer container and follow manufacturer’s instructions. Mine is Cuisinart and I mixed for 30 minutes and placed in the freezer for 1-2 hours. Lime Sherbet

Day 2 of Kettleworx….it’s The Devil! I can barely move. I’ve had to limit my fluid intake because it hurts to sit. At least I didn’t have to go try to play soccer last night like the hubby did. And now for the best part…we are doing the 2nd workout today! Yea!!!! ;/ The day after should be tons of fun! I just can’t wait! The 3rd wonderful session will be Thursday. So for the record, my 3 least favorite days of the week will now be Monday, Thursday and Saturday. But I’ll look like Heidi Klum, so it won’t really matter if I’m grumpy or not. I’m trying really hard to adjust to healthier recipes but I have a stash of saved ones that I have to post. At least this one is on the healthy side. Chocolate Chip Ice Cream Sandwiches

Ever had a Big Kahuna Ice Cream Sandwich at a baseball game?? They are awesome and have about 4 desserts worth of calories. I decided to try to come up with one that had less than a 1200 calories.
1 – 16 oz package Pillsbury Ready to Bake Big Deluxe Chocolate Chip Cookies
6 cups Vanilla Ice Cream
1 cup  Semi-Sweet Chocolate Chips
Bake cookies according to package directions.
Let cool completely.
Place chocolate chips in a bowl.
Place 1 cup of ice cream between 2 cookies and roll in chocolate chips.
Wrap in saran wrap and place in freezer for 1 hour.
